Del Rossi's is where North Philadelphia comes for its cheesesteaks. Ribeye sliced thin, whiz or provolone, onions if you want them. The pizza comes out of a coal-fired oven. Nothing here is complicated. That's the point.
Del Rossi's sits on N 4th Street in the Northern Liberties area of Philadelphia — a neighborhood that's changed a lot around it. The shop has stayed the same. The cheesesteak is ribeye, sliced paper-thin on the flat top, chopped as it cooks, piled onto an Amoroso roll. You say 'wit' or 'witout' for the onions. Cheese Whiz is the classic call; provolone and American are there if you need them. The pizza goes into a coal-fired oven and comes out with a charred, blistered crust that nobody in Center City is matching. Family-owned and family-run — and not interested in changing anything.
